My sister and I (actually both sisters and I) are working on having less sugar, since diabetes runs in our family, and we are all trying to lose some weight. But that said, we still have a sweet tooth, so I am trying to develop recipes that we can still eat. These recipes need to be delicious (naturally!), easy, and easy on the sugar. This time of year, it’s good if I don’t have to turn on the oven, too! So here is my latest development, that turned out quite nicely I think.

Description
An easy, sugar-free, and delicious no bake chocolate dessert.
Ingredients
1 8 oz. package Voortman’s® Fudge Brownie Chocolate Chip Cookies
1/2 stick (4 tablespoons) butter, melted
1 8 oz. tub Cool Whip® Zero Sugar Whipped Topping
1 8 oz. block cream cheese, softened
1 small package Jello® Sugar Free Chocolate Fudge Pudding Mix
1 1/2 cups 2% milk
Instructions
Make the crust: Crush cookies in a plastic bag, reserve 3 or 4 tablespoons of crumbs for topping. Mix the remaining crumbs and melted butter and press into the bottom of an 8 x 8 inch baking pan. Freeze for 30 minutes.
Make the Filling: Mix pudding mix and milk with electric beater. Let sit briefly to thicken. Beat in softened cream cheese until fluffy. Mix in half of Cool Whip® until thoroughly blended. Refrigerate for 30 minutes.
Assemble the Dessert: Spread filling on top of crust. Top with the rest of the Cool Whip® topping. Sprinkle reserved crushed cookies on top. Refrigerate for at least 2 hours. Serve very cold.
