Any gathering with some good queso and tortilla chips is a party. And a good smoked queso is delicious at any party.This is one I’ve made recently and it was a total hit. There are lots of options for changing it up, so feel free to make substitutions and use your favorites.
Smoked Queso

- 1 pound Velveeta processed cheese
- 8 ounces cream cheese
- 8 ounces cheddar cheese
- 1 pound Italian sausage
- 2 cans Rotel tomatoes with chilis, drained
- 1 can evaporated milk
- 3 tablespoons hot sauce
- 2 tablespoons barbecue rub of choice
Instructions
- Preheat smoker to 250°.
- Brown, crumble and drain sausage. Put in foil pan.
- Add all other ingredients to pan, mix.
- Smoke for 1 1/2 to 2 hours, stirring every 30 minutes.
- serve with tortilla chips. For a party, it’s good to serve it up in a crockpot on the warm setting.
Notes
- Change up the sausage to suit your preference. Use hot or mild Italian sausage, hot or mild breakfast sausage, andouille, or even chorizo.
- You can use any kind of cheese in place of the cheddar, but don’t substitute the Velveeta. Even using a generic or store brand could affect the texture.
