Smoked Queso

Any gathering with some good queso and tortilla chips is a party. And a good smoked queso is delicious at any party.This is one I’ve made recently and it was a total hit. There are lots of options for changing it up, so feel free to make substitutions and use your favorites.

Smoked Queso

Description

Awesome party dip, and feeds a crowd.


Ingredients

Units Scale
  • 1 pound Velveeta processed cheese
  • 8 ounces cream cheese
  • 8 ounces cheddar cheese
  • 1 pound Italian sausage
  • 2 cans Rotel tomatoes with chilis, drained
  • 1 can evaporated milk
  • 3 tablespoons hot sauce
  • 2 tablespoons barbecue rub of choice


Instructions

  1. Preheat smoker to 250°.
  2. Brown, crumble and drain sausage. Put in foil pan.
  3. Add all other ingredients to pan, mix.
  4. Smoke for 1 1/2 to 2 hours, stirring every 30 minutes.
  5. serve with tortilla chips. For a party, it’s good to serve it up in a crockpot on the warm setting.

Notes

  1. Change up the sausage to suit your preference. Use hot or mild Italian sausage, hot or mild breakfast sausage, andouille, or even chorizo.
  2. You can use any kind of cheese in place of the cheddar, but don’t substitute the Velveeta. Even using a generic or store brand could affect the texture.
